About the Producer

The estate sits on the Fontana Candida hill at the centre of Agro Tuscolano on the slopes of Lazio. It occupies a centuries-old farmhouse in the place where a grand Roman villa once stood, probably the property of the poet Quinto Orazio Flacco. The cellars and vineyards are steeped in the passion and wine culture that have made Fontana Candida the most distinguished, renowned name for high-quality Frascati in the world.

Vineyard

The vineyards cover approximately 97 hectares in the heart of the Frascati DOC, at between 200 and 400 metres of altitude, on land in the communes of Frascati, Monteporzio Catone, Grottaferrata and partly in Montecompatri and Rome.

Vinification

The grapes, gathered between the middle of September and the end of October, are immediately taken to the cellar and vinified by the white wine method, after a gentle pressing. The must, after cold natural clarification, is fermented at controlled temperature (18°C) with selected yeasts.

Ageing

The new wine rests, until it is bottled, in thermostatically controlled stainless steel tanks under a blanket of nitrogen, to protect it from oxidation.

Tasting Notes

Fontana Candida Frascati has a bright, pale straw colour; delicate fragrance of wild flowers and fruit, especially hawthorn and Golden Delicious apples. Dry flavour, soft and fruity. Fresh lively character. Elegant, mildly aromatic aftertaste of almonds.

12.5% alcohol vol.

Excellent all purpose wine, especially with first courses, fish and cold white meats.

Cellar

Best kept for 1-2 years in bottles stored horizontally in cool, dark conditions. Fontana Candida Frascati is made ready to drink.
