About the Producer

Ca’ Bianca was founded in the early 1950s. The property covers 39 hectares of vineyards that fan out around the vinification and bottling cellar in one solid block. Most of the plots are planted to Barbera, a typical variety of the zone, that has been used here since the 2008 vintage for the Barbera d’Asti DOCG. The Barbera is flanked by a range that also offers a selection of the best wines in the territory, including the Moscato d’Asti, Dolcetto d’Acqui, Gavi and Barolo. In keeping with this cellar’s mission to be young and dynamic, the range also contains several new wines – Langhe Nebbiolo and Roero Arneis – in addition to its classic products. Ca’ Bianca aims to be a modern estate without any historical restrictions, continuously developing and forward-looking. Its prime objective is to offer high-quality wines that while recognizing the typical characteristics of the territory, also consistently strive to adopt forms in line with emerging consumer trends.

Vineyard

Vines trained with the traditional Guyot system on calcareous, crumbly soil, with a wine yield of 75 Hl/Ha.

Vinification

Alcoholic fermentation is conducted in pressurized tanks, using the “Charmat Method”. The fermentation process is interrupted by cooling and filtration when the required level of alcohol is reached, leaving a pleasant natural residual sugar in the new wine.

Ageing

After the alcoholic fermentation, Asti Spumante is bottled under pressure and allowed to rest and settle down in the bottle for a short period of time before being released for consumption.

Tasting Notes

Straw yellow, fine mousse, delicate and intense aromatic Moscato nose reminiscent of apricots, sage and honey with undertones of citrus fruit (lemon and orange); sweet, fresh-tasting palate with a well-balanced, pleasing fruity finish.

Analysis

7.5% alcohol vol.

Food Suggestions

Serve with fruit tarts, biscuits, hazelnut cakes, oven-baked pastries. Excellent on its own as an aperitif.

Serving temperature: 6-8°C.

Cellar

Asti Spumante is best consumed when young.
